INGREDIENTS 2 cups mixed greens
1/4 cup chopped fennel bulb
½ chopped parsley leaves
1 red onion, sliced thinly
Heat oven to 400 degrees.
Wrap two bunches of trimmed beets in foil, and roast until tender, about one hour.
Let cool, and then peel and dice
Whisk together the dressing for beets…
3 tablespoons of extra-virgin olive oil
Juice of one lemon
2 teaspoons honey
1 minced clove garlic
Season with salt and pepper. Toss dressed beets. Plate the fresh greens, fennel and fresh parsley. Top with thinly sliced red onion.
